Here are this weekends cocktails mixed by Wayne Collins..

Puro Margarita

Ingredients

- 25ml/1fl oz lime juice
- ½ lime, zest only
- pinch pink sea salt
- 1 tbsp pure agave syrup
- 50ml/2fl oz agave tequila plata

Method

Mix the lime juice, lime zest, sea salt, agave syrup and tequila with a handful of ice in a cocktail shaker. Shake well.  Strain the cocktail into a coupette glass.

Tropical Paloma

Ingredients

- 1 lime wedge
- 25ml/1fl oz golden grapefruit juice
- 35ml/1¼fl oz gold tequila
- lemonade, to top up
- 1 tbsp passion fruit liqueur
- passion fruit pulp, to garnish

Method

Squeeze the lime juice into a sling glass (or tall glass), add the golden grapefruit juice and tequila and top up with lemonade. Stir the cocktail and then pour the tropical liqueur in a layer over the top.  Garnish with the passion fruit pulp.
